Christmas Treats: Grinch Cookies

Christmas treats have got to be some of my favorite things in the history of everything. I can't walk into a holiday party without going straight to the treat table and snagging some fudge or other delectable and sugary goodness.


I love making brightly-colored Christmas treats that both the kids and adults will enjoy. These Grinch Cookies are definitely one of those recipes! Topped with Andes White Chocolate Peppermint Crunch baking chips, these little cookies pack a lot of flavor and are so chewy and moist. It's hard to eat just one! And Santa must love them, too, because he ate the whole plate of these cookies last year!

Grinch Cookies


1/2 c. butter, softened
1 c. sugar
1 1/2 tsp. vanilla extract
1 egg
2 c. all-purpose flour
1/4 tsp. salt
1/4 tsp. baking soda
2 Tbsp milk
green sugar crystal sprinkles
1 bag Andes White Chocolate Peppermint Crunch baking chips


Preheat the oven to 350 degrees. Beat the butter, sugar, vanilla, and egg in your stand mixer or in a large mixing bowl until well blended.

In a medium bowl, whisk together flour, salt, and baking soda. Add a little of the dry mixture to the butter mixture, then put one of the tablespoons of milk in and mix. Then add more flour mixture and mix, and the last tablespoon of milk and mix. Add the remaining flour mixture, if any.

Shape the dough into 1-inch balls. Place some of the green sugar crystal sprinkles in a small bowl and roll the dough balls all around in the sprinkles til completely covered. Place on an ungreased cookie sheet.

Bake for 8-10 minutes, or until the edges are a light golden brown. Sprinkle a small amount of baking chips in the center of each cookie. Carefully remove the cookies to a cooling rack. Allow to cool so the baking chips don't melt all over the cookies. Enjoy!!
