Crock Pot Mac and Cheese

I am a mom of two busy boys and sometimes getting dinner put together can be a challenge! On these days I turn to my stash of go-to recipes for something that I know my kids love and that requires little work.

One of our favorite go-to recipes is Crock Pot Mac and Cheese. I can prepare dinner in the afternoon while the kids are (hopefully) sleeping or quiet, turn the crock pot on, and done deal! Dinner is ready in just a few hours and the work is done. We love this cheesy and creamy dish, and the bread crumbs on top add just the right amount of crunch. This is a handy recipe to have around!

Crock Pot Mac and Cheese

Ingredients

1 box penne pasta
2 cup milk
1 can evaporated milk
1/2 stick butter, melted and cooled to room temperature
3 eggs
1/2 tsp. salt
Pepper, to taste
3 cup Italian blend cheese
1/2 cup Parmesan cheese
2 tbsp butter
1/4 cup bread crumbs

Directions

Cook the pasta in a pot of boiling water for 5 minutes. Drain and set aside.

Combine both milks, eggs, melted butter, and salt. Whisk until smooth. Place the mixture in the crock pot and add Italian blend cheese and pasta. Sprinkle with pepper and stir.

Sprinkle Parmesan cheese on top of pasta. Cook on low for 2 1/2 hours.

In a saute pan, combine 1/4 cup bread crumbs and 2 tbsp butter. Saute until brown. Sprinkle over the mac and cheese and cook on low for 30 more minutes.
