Broccoli Cauliflower Salad
Every year, I love planing a family garden. As a family, we sit down with our kids and decide what things we want to plant. Each year we try to grow something different. This year I found a really fun planting guide that shows me what type of vegetables grow well together. Last year we grew tomatoes, green peppers, and 3 different types of lettuce. We enjoyed fresh salads every day thanks to our garden. I have always wanted to grow broccoli in my garden. Maybe because one of my favorite summer salad recipe is Broccoli Cauliflower Salad.
We usually start planting our garden the first week in May. I live in Utah, and you never know when it will stop snowing. It literally snowed last week and it is June. In order to plant broccoli, it takes about 6 to 8 weeks to harvest if you plant starts. Broccoli Cauliflower Salad is my go to recipe for family parties and barbecues. It is easy to put together and I usually have the ingredients on hand. That is my kind of salad.
Broccoli Cauliflower Salad
Ingredients
- 1 chopped head broccoli
- 1 chopped head cauliflower
- 4 to 5 stalks celery
- 1 pkg. frozen peas
- 1 lb. bacon
- Cheddar cheese
Dressing
- 2 c. mayonnaise
- 1/4 c. Parmesan cheese
- 1/4 c. white sugar
- 1/4 c. finely diced onion
- 2 tsp. white wine vinegar
Directions
- Fry bacon on med/high heat until fully cooked. Crumble.
- Add first 5 ingredients for the salad and toss with dressing.
- Top salad with grated Cheddar cheese.
- Stir dressing ingredients until sugar dissolves.
- Add salt and pepper to taste to the dressing.
- Serve immediately or store in refrigerator
You can serve this salad at room temperature or chilled.
