Easter Treat: Monkey Bread Bird Nests

From chocolates to marshmallows, when it comes to Easter treats, there are countless ways to help you celebrate the holiday. When asked by Pillsbury to create an Easter treat using one of their products and only five ingredients, I welcomed the opportunity. To me, creating holiday-themed treats is always a nice way to add a special touch to a celebration.

One of my favorite Pillsbury products to use in recipes is the Pillsbury Buttermilk Biscuits. You can pop open a canister and place the biscuits over top of a casserole. Or, place the biscuits on a baking sheet, brush the tops with butter, sprinkle dried basil on the biscuits, and bake them to serve as dinner rolls. Better yet, why not cut the biscuits into chunks and create monkey bread? Being able to pull apart monkey bread to enjoy bite after bite of cinnamon and sugar is fun for all ages ... and you can't beat the taste.

This Easter, instead of making one large monkey bread, bake individual monkey bread muffins. But don't stop there. By adding some toasted coconut and birds, you can create a fun treat that is the perfect springtime Easter treat.

Easter Treat: Monkey Bread Bird Nests

Ingredients:

  • 12 monkey bread muffins
  • 1/2 cup buttercream chocolate frosting
  • 1/2 cup shredded coconut, toasted
  • 18 blue Mini Cadbury Eggs (you'll want to buy two packages)
  • Icing (black and orange)

Directions:

1.) Preheat oven to 375 degrees. Prepare a muffin sheet by spraying all 12 cups with nonstick cooking spray.

2.) Make the monkey bread muffins by opening 1 canister of Pillsbury Buttermilk Biscuits. Cut each slice into six small pieces. Pour 1/4 cup granulated sugar and 1 1/2 teaspoons of cinnamon into a large bag. Add the biscuits chunks into the bag and toss to coat. Place 4 biscuits chunks into each muffin cup. Melt 1/4 cup of butter and 2/3 cup of brown sugar in a small sauce pan. Drizzle the mixture over each muffin. Bake for 15-17 minutes or until the muffins are browned and cooked through. Remove from the oven and allow to cool on a wire rack.

3.) Toast the coconut by covering a baking sheet with aluminum foil and spreading a thin layer of coconut over the foil. Place in the oven at 375 degrees and bake for 10 minutes or until the coconut is toasted.

4.) Separate the blue eggs from the packages of Mini Cadbury Eggs.

5.) Spread a thin layer of chocolate frosting over the top of each muffin.

6.) Stick three blue eggs in the chocolate frosting on each muffin.

7.) Sprinkle the toasted coconut around the blue eggs.

8.) Dab the black icing on each egg to create eyes. Dab the orange frosting on each egg to create a beak.
