Pumpkin Pie Spiced Almonds

It's officially time to break out all things pumpkin and pumpkin pie spiced.  I look forward to this time of year because the flavors of the seasonal foods are divine and the weather starts to cool off.  The leaves start changing colors and it's just a beautiful time of year to get together for some coffee with some girlfriends and munch on a big bowl of these pumpkin pie spiced almonds!

Pumpkin Pie Spiced Almonds

I made up a double batch of these almonds and sent them to work with Hubbyman for a fun fall surprise for his friends.  Everyone loved them and I got requests for the recipe.  I'd say keep the recipe a secret and make these for your family and friends for the holidays and give as gifts.  If you put them in a cute tin or cellophane bag then you will amaze your friends and they will beg for more!

Ingredients for Pumpkin Pie Spiced Almonds

  • 1 egg white
  • 1/2 cup brown sugar
  • 2 tsps pumpkin pie spice
  • 2 cups raw almonds

Directions for Pumpkin Pie Spiced Almonds

Preheat oven to 250F and spray a rimmed cookie sheet with nonstick cookie sheet.

In a medium bowl, whip egg white with a wire wisk until frothy. Add in brown sugar and pumpkin pie spice. Mix until combined. Add in almonds and stir to coat completely.

Pour nuts onto prepared pan and bake for 25-30 minutes. Remove from oven and pour onto waxed paper to cool.

Almonds are an excellent, healthy snack and this is the perfect way to dress them up for fall munching! Do you have any fall sports or parties coming up where these would be handy to have on hand?
