Oatmeal Cookie Dough Blonde Brownies
One of my favorite cookie dough to eat is Oatmeal. Probably love the dough more than the cookies... Can you relate? My inspiration for this recipe came because I didn't want a regular chocolate brownie so I created a blonde brownie recipe and used butterscotch chips instead of chocolate chips. Sprinkled the butterscotch chips over the top with a huge drizzle of caramel sauce. Delicious!
As I was making the cookie dough it was a little thin so I added some hearty granola I had gotten from Great Harvest Bread Company in Taylorsville, Utah who had so generously provided it in our Family Forward Weekend Retreat swag bag. It was exactly what the dough needed. Can I say that this stuff was amazing. I sampled a bit before adding it to the dough. Home made granola. I had no idea that they made this. I knew all about their breads but this was a pleasant surprise.

Oatmeal Cookie Dough Blonde Brownies
Ingredients
- 1 cup sugar
- 1/2 cup butter softened
- 4 eggs, slightly beaten
- 1/2 tsp salt
- 1 tsp vanilla
- 1 cup flour
- 1/4 cup water
- 1 cup butterscotch chips
Heat oven to 350 degrees. Mix together brownie ingredients and spread into greased 9"x 11" baking pan. Bake for 25-30 minutes. Remove and cool completely before adding the cookie dough.
Oatmeal Cookie Dough
- 3/4 cup butter, softened
- 1 cup brown sugar, packed
- 1/2 cup sugar
- 1/4 cup water
- 1 tsp vanilla
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1 cup flour
- 3 cups oatmeal
- 1 cup Great Harvest Bread Granola
Mix all ingredients together to form a thick dough. Spread over cooled brownie. Top with butterscotch chips and caramel sauce as desired. Makes 24 brownies.
