Strawberry Cashew Salad
Summer time calls for eating as light as possible, as we don't want to feel over stuffed or heavy. Salads are a key summer dish and we love making them many different ways. This is one of our favorites and it is enough as entire meal.
Strawberry Cashew Salad
Serves 2 or more
Prep Time 20 mins
Ingredients for salad
- Baby Spinach
- Fresh Strawberries
- Cutie Orange {segments}
- Red Onion
- Cashews
- Goat Cheese
Ingredients for dressing
- Strawberries
- EVOO
- Dash of sugar
- Apple Cider Vinegar
Directions
Cut berries and onion and add to bowl with fresh spinach. Add cutie orange segments and toss with cashews. Sprinkle with goat cheese. Add your dressing ingredients in a bowl and mix or blend puree your strawberries} serve and enjoy. You can make this for as many as you like depending on how much you use. Happy Summer ♥
