Fall Salad: Cranberry, Goat Cheese, & Pecan Salad with Orange Vinaigrette

I love creating salads and quick vinaigrettes and using fall flavors is perfect for adding an easy vegetable to your holiday table. Vinaigrettes are super easy....olive oil plus some sort of acid (any citrus juice or vinegar will do), a pinch of sugar, and any other herbs or seasonings that will go nicely with what's in your salad.

Once you start making your own dressings, you will be so spoiled.  I bet you stop buying store bought dressings because making your own is so easy and fun.  Plus you aren't stuck with an entire bottle that you have to use up.  Just make what you need for tonight...it takes only a couple minutes....then make something different for tomorrow.  The other thing I love about making my own dressing (like my creamy avocado dressing) is that I get to control the sugar and salt content.

Fall Salad: Cranberry, Goat Cheese, & Pecan Salad with Orange Vinaigrette

Cranberry, Goat Cheese, & Pecan Salad with Orange Vinaigrette Ingredients

  • 1 10oz bag romaine lettuce
  • 1/2 cup dried cranberries
  • 1/2 cup candied pecans
  • 2 oz goat cheese
  • juice of one orange (~1/3 cup)
  • 1/3 cup olive oil
  • 1 garlic clove, finely minced
  • 1/4 tsp salt
  • dash of pepper
  • 2 tsps sugar

Cranberry, Goat Cheese, & Pecan Salad with Orange Vinaigrette Directions

In a large salad bowl, combine lettuce, cranberries, and pecans. Pinch off small portions of the goat cheese and add to the salad.

In a small mason jar, add orange juice, oil, salt, pepper, and garlic.  Add in about 1/2 of the sugar.  Screw on lid and shake well to combine. Taste the dressing to see if it is sweet enough for your taste.  I prefer a sweeter orange vinaigrette, so I add it all.
