Crockpot White Chicken Chili Recipe
An wonderful way to warm you up on a chilly Fall day, this Crockpot White Chicken Chili will also help you out on those days when there's lots to do and not much time to plan or make dinner!
The crockpot and Fall seem to go hand in hand, don't they? The weather becomes colder, schedules become busier with school starting and it's great to know that you're dinner will be ready when you walk through the door in the evening! And the prep work for this recipe couldn't get any easier, throw everything into the pot and BINGO, dinner's ready in just 6 - 8 hours. Pair it with the Jalapeño Cornbread and you've got a great addition to any Game Day feast.
Crockpot White Chicken Chili Recipe
serves 4
Ingredients for Crockpot White Chicken Chili
- 1 lb. boneless, skinless chicken breasts, cut into bite-size pieces
- 1 15.8 ounce can great northern beans, drained and rinsed
- 1 15.8 ounce can cannellini beans (White Kidney Beans), drained, rinsed and mashed or pureed (this will help to thicken the chili)
- 11 ounce can white shoepeg corn
- 2 10 ounce cans Rotel diced tomatoes and green chiles
- 2 cups chicken broth
- 3 tablespoons Homemade Taco Seasoning
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- sour cream, shredded Mexican cheese, chopped green onion for garnish, is desired
Directions for making your Crockpot Chicken and White Chili
Place all ingredients into the crockpot and heat on low for 6 - 8 hours, stirring occasionally. Serve with sour cream, shredded cheese, or green onion, if desired.
Does it get any easier than this? I don't think so! A great dinner, easily made without much effort and ready when you walk through the door after a long day of work or events, whatever they may be. This chili will heat you up in no time.
Note: The added chili powder gives it an extra kick, so if spicy isn't your thing you can either leave it out or reduce the amount to 1/4 teaspoon or even an 1/8. My husband likes spicy things, me not so much. He enjoyed the added spice beyond what was in the Homemade Taco Seasoning, but I would have been happy with just that. It will definitely warm you up!
