Easy Strawberry Cheesecake Cupcakes

Summer is headed our way fast, and nothing says summer more than BBQ's and pool parties! If you're headed to one and need an idea for something to bring, how about mini, individual serving Strawberry Cheesecakes? The recipe I am sharing with you today is a fantastic and easy treat that will make people think you spent way more time on it than you actually did! These are perfect for any occasion!

These little cupcakes are easy to make, delicious and a definite show stopper! They are the perfect "in a pinch" dish to bring to any party this summer! You might want to double or triple this recipe, as they don't last long!

Strawberry Cheesecake Cupcakes

makes 12

Ingredients

2 pkg. (8 oz. each) Cream Cheese, softened
1 cup granulated sugar
1 tsp. vanilla extract
2 eggs
12 vanilla wafer cookies
1 cup strawberry preserves
6 fresh strawberries, cut in half lengthwise
powdered sugar for dusting

Preheat your oven to 350*

Directions

Line a muffin pan with 12 cupcake liners. Place a vanilla wafer cookies in each muffin cup, flat side down.

In a stand mixer, beat cream cheese until light and fluffy. Add sugar and vanilla and beat well. Incorporate the eggs, one at a time.

Carefully spoon the cheesecake mixture into each cupcake liner, over the wafer cookies. Bake for 20 minutes.

When the cupcakes have cooled, there will be a small divot in the center.

Fill each divot with a spoonful of strawberry jam and place 1/2 a strawberry in the center. Dust with powdered sugar.

How gorgeous are these little guys? And they are so light and creamy too! Huge wow factor, for such a small amount of work!
