This Ham and Gruyere Quiche is so easy and a great way to use up odds and ends in the fridge for a scrumptious breakfast.

Ham and Gruyere Quiche

Every Saturday, I cook up a big hearty breakfast for my family.  We do pancakes, biscuits & gravy, hashbrown & sausage, or something like this quiche.  I sneak in all sorts of leftovers, like the leftover holiday ham in this recipe.  No one will complain about leftovers if they are used up creatively.  And the best thing about quiche is that you can throw in any meat, cheese, and veggies to create your own unique quiche.

I love that this breakfast is so quick and easy that it's perfect to take to a potluck or breakfast meeting too.  This quiche ended up going with my hubby to work for his weekly meeting with his team.  It got rave reviews from all the guys and he came home with requests for the recipe.  I love that I cleaned out my fridge, made hubby the hero at his meeting, and it took less than an hour.

Ham and Gruyere Quiche Ingredients

  • 1 deep dish frozen pie crust
  • 9 eggs
  • 1 cup shredded gruyere cheese
  • 1 1/2 cups chopped leftover ham
  • handful of grape tomatoes, halved
  • 2 springs thyme, leaves only
  • salt & pepper

Ham and Gruyere Quiche Directions

  1. Preheat oven to 400F.
  2. In a large bowl, beat eggs lightly and add remaining ingredients and mix gently until everything is combined.  Pour egg mixture into pie crust.  Bake for 35-45 minutes or until eggs are set.  Check after about 20 minutes and if crust is browned, gently cover crust edges with tinfoil to prevent the edges from burning while the eggs finish cooking.
  3. Let cool 10-15 minutes before serving.

This is a perfect way to use leftovers and make sure that you have a delicious, filling breakfast. A must-add to any menu plan.
