Recipe: Raspberry Brownies

My very favorite flavor has always been raspberries. I love the fruit but I have also always made sure I had some raspberry syrup around the house just in case I needed a little bit of extra flavor in something I was eating or drinking. And I'm not the only one—my boys have been known to finish off a container of raspberries when I'm not looking. One of my favorite quick desserts is brownies. Chocolate soothes the soul, right? So why not put together two things that we already love. Try out this recipe and you will see what I mean.

Raspberry Brownies

This recipe is adapted from Land-O-Lakes fudgy raspberry brownies recipe

Ingredients

Brownie

  • 1 cup butter
  • 4 squares unsweetened baking chocolate
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free raspberry preserves

Glaze

  • 1/4 cup whipping cream
  • 4 squares semi-sweet baking chocolate
  • 1/4 cup sugar-free raspberry preserves (optional)

Directions

Preheat the oven to 350 degrees. Line a 13x9 inch pan with aluminum foil, extending over the edges. Butter foil. The foil is important for removal of the brownies.

Melt butter and unsweetened chocolate in a pan on medium heat stirring occasionally  While the chocolate melts, combine sugar, eggs, and vanilla in a large bowl. Beat at medium speed. Add melted butter mixture once previous ingredients are well combined. Once mixed, add flour and salt. Spread batter into prepared pan.

Put the preserves into a bowl and mix until smooth. Drop tablespoonfuls of preserves into the batter. Swirl the preserves through the batter with a toothpick making sure it is well swirled. Bake for 35-40 minutes. Let cool.

Place the whipping cream in a saucepan. Add chocolate and preserves and remove from heat once melted and blended together. Use a wire whisk until smooth. Spread over brownies.
