Hearty Tomato Soup with Grilled Cheese Croutons

When it is cold outside, how many of you like to make soup? This is a different and delicious take on the typical tomato soup and grilled cheese sandwich meal that makes for tasty comfort food on a cold blustery winter day.

 Hearty Tomato Soup with Grilled Cheese Croutons

Ingredients:

  • 1 pint grape or cherry tomatoes
  • 1 T olive oil
  • 1/3 cup chopped sweet onion
  • 1 garlic clove
  • 1 T butter
  • 1 can (16 oz) tomato sauce
  • 2 cups vegetable broth
  • 1 tsp. Italian seasoning
  • ½ cup whipping cream
  • Salt and pepper
  • Cheese, bread, and butter for grilled cheese

 

Instructions:

Toss the grape or cherry tomatoes with the olive oil and place in a baking pan.  Roast at 400 degrees F for about half an hour.  Saute the onion and garlic in the butter until softened. Stir in the tomato sauce, broth, seasoning, and the roasted tomatoes. Bring up to a boil and then reduce to a simmer.  Allow to cook for about half an hour.  Let this cool for a few minutes so that it’s easier to handle and then puree in your blender or with an immersion blender.  Put the soup back in the pot and stir in the whipping cream over low heat.  Warm through.  Add salt and pepper to taste.

Prepare the grilled cheese as you normally would – I slice cheese thinly and place it between two slices of bread. Butter the outsides of this sandwich and grill in a non-stick pan until golden brown on each side.  Cut the sandwiches into cubes and place on top of the soup in each bowl.  YUM!
