What is your favorite Girl Scout cookie? Hands down, my favorite is Thin Mint. I remember when I was a Girl Scout, I participated in several cookie drives. It seems like everyone liked to buy Thin Mint cookies. I could hardly keep them in stock at our cookie stand. I loved putting these cookies in the freezer and then eat them cold. Yum! In celebration of the Girl Scouts Cookie Program we would like to feature a recipe made with the Thin Mint cookies. I can't think of a better way to start off the week then with this yummy dessert.

Thin Mint Pie

Made with Girl Scout Thin Mint cookies

TOTAL TIME: Prep: 15 min. + freezing

MAKES: 8 servings

Ingredients

  • 2 packages (3 ounces each) cream cheese, softened
  • 1 can (14 ounces) sweetened condensed milk
  • 15 drops green food coloring
  • 24 Thin Mint Girl Scout cookies
  • 2 cups whipped topping
  • 1 chocolate crumb crust (9 inches)

Directions

In a large bowl, beat the cream cheese until fluffy. Gradually beat in milk until smooth. Beat in the food coloring. Coarsely crush 16 cookies; stir into the cream cheese mixture. Fold in whipped topping. Spoon into the crust. Cover and freeze overnight. Remove from the freezer 15 minutes before serving. Garnish with remaining cookies. Yield: 8 servings.
