Chips and Salsa Chicken Dinner

I love to make fresh meals for the entire family to—meals that are quick and easy, and something other than pizza. This recipe has been made many times in my home and it is great because it pleases grown ups and kids. I like it because it is freshly made and full of flavor.

It uses only a handful of ingredients and can be made with chicken breasts or tenders. I use the tenders because they are usually more economical. This recipe can be table ready in about 30 minutes, so it is great for those days when you are coming back from sports practice or school activities.

Chips and Salsa Chicken Dinner

Ingredients

  • 2 tablespoons oil
  • 2 tablespoons lime or lemon juice
  • 1 tablespoon honey
  • 4 boneless,skinless chicken breasts
  • 1 cup tortilla chips
  • 1 cup bottled chunky salsa
  • 3/4 cup cheddar cheese, shredded

 Directions

Crush the tortilla chips (I put them in a baggie and squeeze the bag), and preheat oven to 350 degrees. Coat a baking pan with butter or margarine.

Mix oil, juice, and honey together in a shallow bowl. Dip chicken into mixture and coat in tortilla chips (again in the baggie).

Place chicken in oven and cook 10-15 minutes. Ten minutes for tenders, longer for breasts.

Pull pan out of oven and pour salsa on chicken. I would recommend mild (or medium if your family likes a little spice).

Salsa-over-chicken

Top with shredded cheese and return to oven.

Bake an additional 10-15 minutes until chicken is no longer pink. Internal tempurature should be 165 degrees F. May take longer for thicker breasts.

The result is a nice tasty meal.

Serve with sour cream and avocado, if desired.
