Recipe: Fall Chicken and Bean Soup With a Kick

I love cooking in my slow cooker. There is nothing like coming home from picking kids up from school, working on homework, and looking over to see dinner all ready to go in my crock pot. Not to mention the fact that everything comes out so yummy!

To celebrate the fall season, I made a yummy soup in my slow cooker. This is one of those curl up with a good book and roaring fire type of soups.

Doesn't that look so good? I am telling you, this has become my go to meal when I want a warm comforting soup. It's similar to a bean with bacon but it has a bit of a kick.

All you do is open a few cans of beans, dump them in the crockpot and let it go. If your family is like mine, you add some bacon and onions. But that is optional. If you are serving kids or anyone who likes things mild, I recommend changing the buffalo chicken tenders for regular chicken. But if you like a kick, go ahead and use those buffalo chicken tenders.

In the last 1/2 hr you put in some half and half and cut up the chicken tenders.  Sprinkle them over the top as you dish up the soup.

Fall Chicken and Bean Soup with a Kick

Ingredients

 

  • 1 package Buffalo Chicken Tenders
  • 4 cans great northern beans
  • 1 can pinto beans
  • 1 can light kidney beans
  • 1 can green chilies
  • 1 can diced tomatoes
  • 1 onion {optional}
  • 1/2 lb bacon {optional}
  • 1 Tablespoon garlic
  • 2 cups half and half
  • 2 Tablespoons chicken bullion base

Directions

  • Cut up onion and bacon (optional)
  • Cook bacon and onion on stove top till done (optional)
  • Add to slow cooker (optional)
  • If you do the onions and bacon, add the garlic when cooking.
  • Open beans, chilies and tomatoes.
  • Do not drain.
  • Add to slow cooker.
  • Add chicken bullion base.
  • Cover and cook on high for 4 hrs.
  • Add the half and half and cook for another 1/2 hr.
  • Cook the Buffalo Chicken Tenders.
  • Slice the Buffalo Chicken Tenders into bite size pieces.
  • Ladle the soup into bowls and top with the Buffalo Chicken Tenders.
