Salad Recipe: Healthy and Delicious Flavor Combination

Lunch dates are my favorite. And so is lemonade. Brownies. Swimming pools. Sun tans. Beaches. Quiet. Naps. My son has been napping so much lately I’m afraid he will wake up one day and tell me, despite his ability to talk at almost 5 months old, that he’s slept enough until he’s ten and he’s ready to play. I would cry. I love when he naps because I can nap. Or read. Or work. Or make a crazy good lunch and enjoy it with some friends.
I have a go-to salad that is not pretentious and full of color and flavor. My friends eat it, my husband eats it, and I devour it. My go-to version looks like this:
Simple Salad Recipe
Ingredients:
- Spinach
- Dark, mixed greens
- Spicy and Sweet Pecans
- Blueberries
- Strawberries
- Blueberries or Blackberries
- White Stilton with Apricot and Ginger
- Dressing (whatever you have in the refrigerator that matches the flavor of your ingredients)
I know this combo works and tastes delicious. But here’s what I’m saying: find a combo that’s good for you and stick to it. Start with your favorite greens, and then find some nuts you love. And I mean love. You can't go wrong with berries of any kind.
You’ll be happy you took the time to figure out a winning combo. Having a go-to salad will get you out of a pinch when you need a quick meal and you can eat it for days. Enjoy!
