Grilled Shrimp with Jicama

It's that time of year.  We are eating later, we have the grills fired up and we are eating light and healthy.  Summer food is all about quick and easy.  This grilled shrimp recipe couldn't be any easier and is perfect for entertaining.

Grilled Shrimp With Jicama


Serves 4
Prep time 20 mins
Cook time 8 to 10 mins on the grill

Ingredients

  • 1 Jicama
  • 1 Red Onion
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Seedless Orange or Cutie
  • 1 Green Onion
  • Dash of Smoked Paprika
  • Dash of Chili Powder
  • Dash of Kosher Salt
  • 1 Tbls Rice Wine Vinegar
  • 1 Tbls Lime Zest {just the peel, zest of the lime}
  • 1/4 Lime Juice
  • Granulated Garlic
  • 1 lb peeled and de-vained shrimp
  • EVOO

Directions

 

  • Julienne your jicama, red onion, red and yellow bell peppers.  Chop your green onion.  Peel and dice your orange.  Place those and ingredients and all the rest into a bowl and toss.
  • Rinse and toss your shrimp in EVOO, garlic, kosher salt, lime zest, paprika.  Skewer your shrimp and green bell pepper chunks and grill.  Serve on top of your jicama.
